Instructions
- In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Bring the mixture to a boil, stirring constantly to ensure the sugar completely dissolves.
- Once the sugar is completely dissolved, remove the saucepan from the heat and allow the syrup to cool to room temperature.
- After the syrup has cooled, add the juice of 4 lemons to the syrup. Stir well to ensure the juice is fully incorporated.
- Pour the lemon-sugar mixture into a shallow, freezer-safe dish.
- Place the dish into the freezer. Every 30 minutes, stir the mixture with a fork to break up the ice crystals. Continue this process for about 2-3 hours, until the mixture achieves a slushy consistency.
- To serve, spoon the Lemon Granizado into chilled glasses. Enjoy as a refreshing dessert or a palate cleanser between meals.
Tips
- For a variation, try using other citrus fruits like lime or grapefruit.
- To enhance the flavor, add a sprig of fresh mint or a splash of limoncello before freezing.
- If you prefer a smoother texture, you can blend the mixture in a blender or food processor after the initial freezing period.
