Experience a taste of Spanish summer with this Lemon Granizado! This quintessential semi-frozen dessert, adored in Spain and Latin America, is a refreshing blend of sweet and sour. The icy texture and bright lemon flavor make it the perfect antidote to a sweltering day. In Spain, it's often enjoyed as an afternoon treat or a palate cleanser between meals.

Ingredients

Lemons
4 (juiced)
Granulated Sugar
1 cup
Water
2 cups

Instructions

  1. In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Bring the mixture to a boil, stirring constantly to ensure the sugar completely dissolves.
  2. Once the sugar is completely dissolved, remove the saucepan from the heat and allow the syrup to cool to room temperature.
  3. After the syrup has cooled, add the juice of 4 lemons to the syrup. Stir well to ensure the juice is fully incorporated.
  4. Pour the lemon-sugar mixture into a shallow, freezer-safe dish.
  5. Place the dish into the freezer. Every 30 minutes, stir the mixture with a fork to break up the ice crystals. Continue this process for about 2-3 hours, until the mixture achieves a slushy consistency.
  6. To serve, spoon the Lemon Granizado into chilled glasses. Enjoy as a refreshing dessert or a palate cleanser between meals.
