Instructions
- In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper until well combined to create a flavorful marinade.
- Place the chicken pieces in a ziplock bag or a shallow dish. Pour the marinade over the chicken, seal the bag, and massage it to ensure the chicken is evenly coated. Refrigerate for at least 1 hour, or overnight for optimal flavor.
- Preheat your grill to medium-high heat, ensuring it's hot enough to achieve a nice char on the chicken.
- Thread the marinated chicken pieces onto skewers, alternating with wedges of red onion for added flavor and color.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a lovely charred exterior. The internal temperature should reach 165°F (75°C).
- While the chicken is grilling, place the pita bread on the grill for a few minutes on each side until warm and slightly toasted.
- To serve, place the grilled chicken souvlaki on warm pita bread. Top with sliced tomatoes, cucumbers, and a generous dollop of tzatziki sauce.
- Enjoy your delicious Greek chicken souvlaki with a side of Greek salad or roasted vegetables for a complete meal!
Tips
- For added flavor, you can soak wooden skewers in water for 30 minutes before grilling to prevent them from burning.
- Feel free to add other vegetables such as bell peppers or zucchini to the skewers for a colorful and nutritious twist.
- If you can't find tzatziki sauce, you can easily make your own by mixing Greek yogurt with grated cucumber, garlic, lemon juice, and a pinch of salt.
