Original recipe serves 4

Salt

Pasta (such as elbow macaroni or penne)
8 ounces
Unsalted butter
2 tablespoons
All-purpose flour
2 tablespoons
Milk
2 cups
Mozzarella cheese, shredded
1 cup
Feta cheese, crumbled
1 cup
Fresh spinach, chopped
2 cups
Sun-dried tomatoes, chopped
1/2 cup

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the unsalted butter over medium heat. Once melted, stir in the all-purpose flour to form a roux, cooking for about 1-2 minutes until lightly golden.
  4. Gradually whisk in the milk, making sure there are no lumps. Bring to a simmer and cook for about 5 minutes, or until the sauce has thickened to a creamy consistency.
  5. Remove the saucepan from heat and stir in the shredded mozzarella and crumbled feta cheese until melted and smooth.
  6. Fold in the chopped spinach and sun-dried tomatoes into the cheese sauce, followed by the cooked pasta. Mix everything until well combined. Season with salt and pepper to taste.
  7. Transfer the pasta mixture to a greased baking dish, spreading it evenly. If desired, sprinkle additional mozzarella on top for an extra cheesy crust.
  8. Bake in the preheated oven for about 20 minutes, or until the top is golden and bubbly.
