Greek Mac and Cheese

Ingredients

- Pasta (such as elbow macaroni or penne)
- 8 ounces
- Unsalted butter
- 2 tablespoons
- All-purpose flour
- 2 tablespoons
- Milk
- 2 cups
- Mozzarella cheese, shredded
- 1 cup
- Feta cheese, crumbled
- 1 cup
- Fresh spinach, chopped
- 2 cups
- Sun-dried tomatoes, chopped
- 1/2 cup
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the unsalted butter over medium heat. Once melted, stir in the all-purpose flour to form a roux, cooking for about 1-2 minutes until lightly golden.
- Gradually whisk in the milk, making sure there are no lumps. Bring to a simmer and cook for about 5 minutes, or until the sauce has thickened to a creamy consistency.
- Remove the saucepan from heat and stir in the shredded mozzarella and crumbled feta cheese until melted and smooth.
- Fold in the chopped spinach and sun-dried tomatoes into the cheese sauce, followed by the cooked pasta. Mix everything until well combined. Season with salt and pepper to taste.
- Transfer the pasta mixture to a greased baking dish, spreading it evenly. If desired, sprinkle additional mozzarella on top for an extra cheesy crust.
- Bake in the preheated oven for about 20 minutes, or until the top is golden and bubbly.
