Ingredients
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Lemon juice (2 tablespoons)
- Extra virgin olive oil (2 tablespoons)
- Parmesan cheese (1/4 cup, grated)
- Feta cheese (1/2 cup, crumbled)
- Kalamata olives (1/2 cup)
- Red onion (1/2, thinly sliced)
- Tomatoes (2, diced)
- Cucumber (1, diced)
- Romaine lettuce (1 head, chopped)
Instructions
- In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomatoes, thinly sliced red onion, and Kalamata olives.
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
