Ingredients

Romaine lettuce
4 cups, chopped
Cucumber
1 large, diced
Tomatoes
2 medium, diced
Red onion
1/2, thinly sliced
Kalamata olives
1/2 cup, pitted
Feta cheese
1 cup, crumbled
Parmesan cheese
1/4 cup, grated
Extra virgin olive oil
1/4 cup
Lemon juice
2 tablespoons, freshly squeezed
Dried oregano
1 teaspoon
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large bowl, gently combine the chopped romaine lettuce, diced cucumber, diced tomatoes, thinly sliced red onion, and Kalamata olives.
  2. In a separate small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, dried oregano, salt, and black pepper until emulsified to create the dressing.
