Authentic Greek Souvlaki

Ingredients

Pork shoulder
1.5 lbs, cut into 1-inch cubes
Olive oil
1/4 cup
Lemon juice
2 tablespoons
Garlic
3 cloves, minced
Oregano
2 teaspoons, dried
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Pita bread
4 pieces
Tzatziki sauce
1 cup
Greek salad
4 cups, for serving

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
  2. Add the pork cubes to the marinade, ensuring that each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. While the pork is marinating, prepare the tzatziki sauce. In a medium bowl, combine 1 cup of Greek yogurt, 1 grated cucumber (squeezed to remove excess water), 1 minced garlic clove, 1 tablespoon of lemon juice, and salt to taste. Mix well and refrigerate until ready to serve.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated pork cubes onto skewers, leaving a little space between each piece for even cooking.
  6. Grill the souvlaki for about 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred on the outside.
  7. Warm the pita bread on the grill for a minute on each side, or wrap in foil and place on the grill for a few minutes.
  8. To serve, place the grilled souvlaki on the warm pita bread, top with a generous dollop of tzatziki sauce, and add a portion of Greek salad on the side.
