Authentic Greek Souvlaki

- 1.5 lbs, cut into 1-inch cubes Pork shoulder
- 1/4 cup Olive oil
- 2 tablespoons Lemon juice
- 3 cloves, minced Garlic

- 1/2 teaspoon Black pepper
- 4 pieces Pita bread
- 1 cup Tzatziki sauce
- 4 cups, for serving Greek salad

Instructions
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
- Add the pork cubes to the marinade, ensuring that each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- While the pork is marinating, prepare the tzatziki sauce. In a medium bowl, combine 1 cup of Greek yogurt, 1 grated cucumber (squeezed to remove excess water), 1 minced garlic clove, 1 tablespoon of lemon juice, and salt to taste. Mix well and refrigerate until ready to serve.
- Preheat your grill to medium-high heat.
- Thread the marinated pork cubes onto skewers, leaving a little space between each piece for even cooking.
- Grill the souvlaki for about 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred on the outside.
- Warm the pita bread on the grill for a minute on each side, or wrap in foil and place on the grill for a few minutes.
- To serve, place the grilled souvlaki on the warm pita bread, top with a generous dollop of tzatziki sauce, and add a portion of Greek salad on the side.
