Instructions
- In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper to create a flavorful marinade.
- Place the bite-sized chicken pieces in a large ziplock bag, pour the marinade over the chicken, seal the bag, and massage the marinade into the chicken to ensure an even coating.
- Refrigerate the marinated chicken for at least 1 hour, or overnight for the best flavor.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
- Remove the skewers from the grill and let them rest for a few minutes to retain their juices.
- To serve, place warm pita bread on a plate, top with grilled chicken souvlaki, and add sliced cucumbers, red onion, and diced tomatoes.
- Generously drizzle tzatziki sauce over the top and enjoy your delicious Greek-style chicken souvlaki!
Tips
- For an extra flavor boost, try marinating the chicken overnight.
- Feel free to add bell peppers or zucchini to the skewers for a colorful vegetable addition.
- If you don't have skewers, you can grill the chicken pieces directly on the grill or use a grill basket.
