Servings: 4

Ingredients

Chicken breasts
1.5 pounds, cut into bite-sized pieces
Olive oil
1/4 cup
Lemon juice
2 tablespoons, freshly squeezed
Garlic
3 cloves, minced
Dried oregano
1 teaspoon
Dried thyme
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Cucumber
1, sliced
Red onion
1, thinly sliced
Tomatoes
2, diced
Pita bread
4, warmed
Tzatziki sauce
1 cup, store-bought or homemade

Instructions

  1. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper to create a flavorful marinade.
  2. Place the bite-sized chicken pieces in a large ziplock bag, pour the marinade over the chicken, seal the bag, and massage the marinade into the chicken to ensure an even coating.
  3. Refrigerate the marinated chicken for at least 1 hour, or overnight for the best flavor.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
  6. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
  7. Remove the skewers from the grill and let them rest for a few minutes to retain their juices.
  8. To serve, place warm pita bread on a plate, top with grilled chicken souvlaki, and add sliced cucumbers, red onion, and diced tomatoes.
  9. Generously drizzle tzatziki sauce over the top and enjoy your delicious Greek-style chicken souvlaki!
