Chicken breasts

Olive oil
1 tablespoon
Greek yogurt
1 cup
Cucumber
1, finely diced
Cherry tomatoes
1 cup, halved
Red onion
1 small, finely chopped
Kalamata olives
1/2 cup, pitted
Fresh dill
2 tablespoons, finely chopped
Lemon juice
1 tablespoon
Garlic
2 cloves, minced
Mixed greens or salad greens
4 cups

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, then season with salt and pepper.
  3. Grill the chicken for 6-8 minutes per side, until the juices run clear and the chicken is cooked through. Allow it to rest for a few minutes, then slice into strips.
  4. Prepare the tzatziki dressing by combining Greek yogurt, finely diced cucumber, halved cherry tomatoes, finely chopped red onion, pitted Kalamata olives, finely chopped fresh dill, lemon juice, minced garlic, salt, and pepper in a bowl. Mix well until the ingredients are well-distributed.
  5. In a large salad bowl, combine the grilled chicken strips with mixed greens or your choice of salad greens.
  6. Pour the tzatziki dressing over the salad and toss to coat evenly. Adjust the seasoning if necessary.
