Potatoes
4 medium-sized, preferably yukon gold
Olive oil
2 tablespoons
Salt
1 teaspoon
Pepper
1/2 teaspoon
Greek yogurt
1 cup, plain
Chives
2 tablespoons, finely chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly under cold water and pat them dry with a towel. Prick several holes in each potato with a fork to allow steam to escape during baking.
  3. In a small bowl, combine the olive oil, salt, and pepper. Rub this mixture all over each potato to coat them evenly.
  4. Place the potatoes on a baking sheet lined with parchment paper for easy cleanup. Bake for about 1 hour, or until they are soft and easily pierced with a fork.
  5. Once baked, remove the potatoes from the oven and let them cool for a few minutes. Cut a slit in the top of each potato to create an opening.
  6. Spoon the Greek yogurt generously into each potato, filling it to the brim.
  7. Sprinkle the chopped chives on top of the yogurt for a fresh and vibrant garnish.
  8. Serve the potatoes hot, with extra Greek yogurt and chives on the side if desired.
