Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, honey, cornstarch, and water until smooth. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the cashews and toast them until golden brown, about 2 minutes, stirring frequently to prevent burning. Remove from the skillet and set aside.
- In the same skillet, add a drizzle of cooking oil if needed. Once hot, add the minced garlic and ginger, cooking until fragrant, about 1 minute.
- Add the trimmed green beans to the skillet and stir-fry for 5-7 minutes, or until they are bright green and crisp-tender.
- Pour the prepared sauce over the green beans, tossing to coat evenly. Cook for an additional 2 minutes, until the sauce has thickened and clings to the beans.
- Season with salt and black pepper to taste, adjusting as desired.
- Remove from heat and sprinkle the toasted cashews over the stir-fry.
- Serve hot as a side dish or over rice or quinoa for a wholesome main course.
Tips
- For added heat, consider adding red pepper flakes or a splash of sriracha to the sauce.
- Feel free to incorporate other vegetables like bell peppers, carrots, or broccoli for a more colorful dish.
- This stir fry can also be easily made vegan by replacing honey with maple syrup or agave nectar.
