- Fresh green beans
- 1 pound, trimmed and cut into 2-inch pieces
- Unsalted butter

- Onion
- 1 medium, diced
- All-purpose flour

- Milk
- 1 cup
- Shredded cheddar cheese
- 2 cups
- Salt
- 1 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
- Breadcrumbs
- 1 cup, for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 5 minutes, or until they are crisp-tender. Drain and set aside.
- In a large skillet, melt the unsalted butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Stir in the all-purpose flour and cook for 1 minute, stirring constantly to form a roux.
- Gradually whisk in the milk and continue to cook, stirring frequently, until the mixture thickens, about 3-4 minutes.
- Remove the skillet from heat and stir in the shredded cheddar cheese until fully melted and smooth. Season the cheese sauce with salt and pepper to taste.
- Add the cooked green beans to the cheese sauce and gently toss to coat the beans evenly.
- Transfer the green bean and cheese mixture to a greased casserole dish and sprinkle the breadcrumbs evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the casserole is hot and bubbly, and the breadcrumbs are golden brown.
