Fresh parsley
1/4 cup, chopped
Toasted almonds
1/3 cup, roughly chopped
Salt
to taste
Black pepper
to taste
Garlic
2 cloves, minced
Extra virgin olive oil
3 tablespoons
Lemon
1 large, juiced and zested
Fresh green beans
1 pound, trimmed

Instructions

  1. Bring a large pot of salted water to a boil. Add the trimmed green beans and cook until crisp-tender, about 3-4 minutes.
  2. Drain the green beans and immediately rinse them under cold water to stop the cooking process and preserve their vibrant color.
  3. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, salt, and black pepper to create a bright and tangy dressing.
  4. In a large mixing bowl, combine the cooled green beans with the lemon dressing, tossing until the beans are well-coated.
