
Green Bean and Tuna Salad
This refreshing salad combines crisp green beans, flaky tuna, and tangy vinaigrette for a light and satisfying meal.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 tablespoon)
- Extra virgin olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (1/4 cup, chopped)
- Kalamata olives (1/4 cup, pitted and halved)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Canned tuna (2 cans, drained)
- Green beans (1 pound, trimmed and halved)
Instructions
- Bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 3-4 minutes. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked green beans, tuna, cherry tomatoes, red onion, Kalamata olives, and fresh parsley.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the salad and toss to coat evenly.
