
Green Chili and Pepper Jack Omelette
This delicious omelette is filled with green chilies and pepper jack cheese, giving it a spicy and flavorful kick.
Ingredients
- Butter (1 tablespoon)
- Black pepper (to taste)
- Salt (to taste)
- Pepper jack cheese (1/4 cup, shredded)
- Green chilies (2 tablespoons, diced)
- Eggs (3)
Instructions
- In a bowl, beat the eggs until well combined.
- Add the diced green chilies, shredded pepper jack cheese, salt, and black pepper to the beaten eggs. Mix well.
- Heat a non-stick skillet over medium heat and melt the butter.
- Pour the egg mixture into the skillet and cook for 2-3 minutes, or until the edges start to set.
- Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked eggs to flow to the edges.
- Continue cooking for another 2-3 minutes, or until the omelette is mostly set but still slightly runny on top.
- Fold the omelette in half and cook for an additional 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
- Transfer the omelette to a plate and serve hot.
