Enhanced Green Chili Stew

This vibrant and hearty Green Chili Stew is a delightful celebration of flavors, bringing together tender pork, earthy potatoes, and the fiery kick of green chilies. Ingredients

Olive oil
2 tablespoons
Salt
1 teaspoon (to taste)
Black pepper
1/2 teaspoon (to taste)
Ground cumin
1 tablespoon
Chicken broth
4 cups
Garlic
4 cloves, minced
Onion
1 large, diced
Potatoes
2 cups, peeled and cubed
Green chilies
1 cup, chopped (fresh or canned)
Pork shoulder
2 pounds, cut into 1-inch cubes

Instructions

  1. In a large pot, heat the olive oil over medium heat. Once hot, add the cubed pork shoulder and season with salt and black pepper. Cook until the pork is browned on all sides, about 8-10 minutes.
  2. Remove the browned pork from the pot and set it aside on a plate.
  3. In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.
  4. Return the browned pork to the pot. Add the chopped green chilies, cubed potatoes, chicken broth, cumin, and additional salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2 hours, stirring occasionally, until the pork is tender and the flavors meld beautifully.
  6. Taste and adjust seasoning if necessary before serving.
