Authentic Thai Green Curry Chicken

Ingredients

  • Lime (1, juiced)
  • Fresh basil leaves (handful, roughly torn)
  • Brown sugar (2 tablespoons)
  • Fish sauce (2 tablespoons)
  • Bamboo shoots (1 cup, drained and sliced)
  • Bell peppers (2, sliced)
  • Vegetable oil (2 tablespoons)
  • Coconut milk (400ml can)
  • Green curry paste (3 tablespoons)
  • Chicken breast (2, cut into bite-sized pieces)

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the green curry paste to the pan and sauté for a minute until it releases its fragrant aroma.
  3. Add the chicken pieces to the pan and stir until they are evenly coated with the curry paste and are no longer pink in the center.
  4. Pour in the coconut milk, followed by the fish sauce and brown sugar. Stir well to dissolve the sugar and combine the flavors.
  5. Add the sliced bell peppers and bamboo shoots to the pan. Lower the heat and let the curry simmer for 10 minutes.
  6. Stir in the roughly torn basil leaves and the juice of one lime. Cook for an additional minute to let the fresh herbs infuse their flavor.
  7. Serve the curry hot with a side of steamed jasmine rice. Garnish with a few extra basil leaves for a pop of color and freshness.
