Authentic Thai Green Curry Chicken

Ingredients
- Lime (1, juiced)
- Fresh basil leaves (handful, roughly torn)
- Brown sugar (2 tablespoons)
- Fish sauce (2 tablespoons)
- Bamboo shoots (1 cup, drained and sliced)
- Bell peppers (2, sliced)
- Vegetable oil (2 tablespoons)
- Coconut milk (400ml can)
- Green curry paste (3 tablespoons)
- Chicken breast (2, cut into bite-sized pieces)
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the green curry paste to the pan and sauté for a minute until it releases its fragrant aroma.
- Add the chicken pieces to the pan and stir until they are evenly coated with the curry paste and are no longer pink in the center.
- Pour in the coconut milk, followed by the fish sauce and brown sugar. Stir well to dissolve the sugar and combine the flavors.
- Add the sliced bell peppers and bamboo shoots to the pan. Lower the heat and let the curry simmer for 10 minutes.
- Stir in the roughly torn basil leaves and the juice of one lime. Cook for an additional minute to let the fresh herbs infuse their flavor.
- Serve the curry hot with a side of steamed jasmine rice. Garnish with a few extra basil leaves for a pop of color and freshness.
