Green Curry Fried Rice

Ingredients
- Black pepper

- Fish sauce

- Carrots
- 1 cup, diced
- Green bell pepper
- 1, diced
- Garlic
- 2 cloves, minced
- Vegetable oil
- 2 tablespoons
- Coconut milk
- 1/2 cup
- Green curry paste
- 2 tablespoons
- Cooked rice
- 3 cups, chilled overnight
Instructions
- In a bowl, thoroughly mix the green curry paste with the coconut milk. This forms the heart of your dish, the green curry sauce.
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and sauté until it turns golden and aromatic, about 1 minute.
- Introduce the diced green bell pepper and carrots to the skillet and stir-fry for 3-4 minutes until they slightly soften.
- Pour the green curry-coconut mixture into the skillet and mix well to coat the veggies.
- Add the chilled, cooked rice to the skillet. Stir-fry for 5-6 minutes, ensuring to break up any clumps and mix well.
- Now, add the frozen peas, soy sauce, fish sauce, and lime juice. Stir well to combine all the flavors.
- Continue to cook for an additional 2-3 minutes until the peas are heated through.
- Season your fried rice with salt and freshly ground black pepper to taste.
- Remove the skillet from heat and stir in the chopped fresh basil leaves for a fragrant finish.
