Enhanced Green Tea Cheesecake

Ingredients
- Graham cracker crumbs
- 1 1/2 cups
- Butter
- 1/3 cup, melted
- Cream cheese
- 16 ounces, softened
- Sugar
- 3/4 cup
- Matcha green tea powder
- 2 tablespoons
- Vanilla extract
- 1 teaspoon
- Eggs
- 3 large
- Sour cream
- 1 cup
- Whipped cream
- for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form a solid crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a separate mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar, matcha powder, and vanilla extract, mixing until fully incorporated.
- Add the eggs one at a time, mixing well after each addition to ensure a smooth batter. Finally, stir in the sour cream until combined.
- Pour the cream cheese mixture over the cooled crust in the springform pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly. The edges should be slightly golden.
- Remove from the oven and allow to cool to room temperature in the pan. Once cooled, refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cheesecake to set.
- When ready to serve, carefully remove the cheesecake from the springform pan and top with whipped cream. Slice and serve chilled. Enjoy!
