Ingredients

Graham cracker crumbs
1 1/2 cups
Butter
1/3 cup, melted
Cream cheese
16 ounces, softened
Sugar
3/4 cup
Matcha green tea powder
2 tablespoons
Vanilla extract
1 teaspoon
Eggs
3 large
Sour cream
1 cup
Whipped cream
for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form a solid crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a separate mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar, matcha powder, and vanilla extract, mixing until fully incorporated.
  5. Add the eggs one at a time, mixing well after each addition to ensure a smooth batter. Finally, stir in the sour cream until combined.
  6. Pour the cream cheese mixture over the cooled crust in the springform pan, smoothing the top with a spatula.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. The edges should be slightly golden.
  8. Remove from the oven and allow to cool to room temperature in the pan. Once cooled, refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cheesecake to set.
  9. When ready to serve, carefully remove the cheesecake from the springform pan and top with whipped cream. Slice and serve chilled. Enjoy!
