Instructions
- In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk together until well mixed.
- In another bowl, combine the milk, beaten egg, and melted butter. Stir until combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Preheat a griddle or skillet over medium heat and lightly grease it with additional melted butter.
- Pour about 1/4 cup of the batter onto the griddle for each cornbread. Cook until golden brown, approximately 2 minutes on each side.
- While the cornbread is cooking, prepare the honey butter by beating the softened butter and honey together in a small bowl until smooth and creamy.
- Serve the griddled cornbread warm with a generous dollop of honey butter on top.
Tips
- For added flavor, consider mixing in some shredded cheese, diced jalapeños, or fresh herbs into the batter.
- If you prefer a sweeter cornbread, increase the sugar to 1/4 cup.
- This cornbread can also be baked in a preheated oven at 400°F (200°C) for about 20-25 minutes in a greased baking dish for a different texture.
