Cornmeal
1 cup
All-purpose flour
1 cup
Granulated sugar
2 tablespoons
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Milk
1 cup
Egg
1, beaten
Unsalted butter
4 tablespoons, melted (plus extra for greasing)
Honey
2 tablespoons

Instructions

  1. In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk together until well mixed.
  2. In another bowl, combine the milk, beaten egg, and melted butter. Stir until combined.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  4. Preheat a griddle or skillet over medium heat and lightly grease it with additional melted butter.
  5. Pour about 1/4 cup of the batter onto the griddle for each cornbread. Cook until golden brown, approximately 2 minutes on each side.
  6. While the cornbread is cooking, prepare the honey butter by beating the softened butter and honey together in a small bowl until smooth and creamy.
  7. Serve the griddled cornbread warm with a generous dollop of honey butter on top.
