Ingredients

Artichokes
4 large
Lemon
1, juiced and zested
Garlic
4 cloves, minced
Olive oil
1/4 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Dried oregano
1 teaspoon
Red pepper flakes
1/2 teaspoon, or to taste

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Trim the artichokes by cutting off the top inch of each and trimming the stem to about an inch from the base.
  3. Add the artichokes to the boiling water, reduce heat, and simmer for 15 minutes, or until tender. The outer leaves should pull away easily.
  4. Carefully remove the artichokes from the water and let them cool slightly.
  5. Preheat the grill to medium-high heat.
  6. Once cool enough to handle, cut the artichokes in half lengthwise and remove the fuzzy choke with a spoon.
  7. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, black pepper, dried oregano, and red pepper flakes to create the marinade.
  8. Brush the artichoke halves generously with the lemon-garlic marinade, ensuring both sides are well coated.
  9. Place the artichokes cut side down on the grill and cook for 5-7 minutes, or until they are nicely charred and tender.
  10. Flip the artichokes and grill for an additional 5 minutes.
  11. Remove from the grill and serve hot, drizzling any remaining marinade over them.
