Grilled Artichokes with Lemon-Garlic Marinade

Ingredients
- Artichokes
- 4 large
- Lemon
- 1, juiced and zested
- Garlic
- 4 cloves, minced
- Olive oil
- 1/4 cup
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Dried oregano
- 1 teaspoon
- Red pepper flakes
- 1/2 teaspoon, or to taste
Instructions
- Fill a large pot with water and bring it to a boil.
- Trim the artichokes by cutting off the top inch of each and trimming the stem to about an inch from the base.
- Add the artichokes to the boiling water, reduce heat, and simmer for 15 minutes, or until tender. The outer leaves should pull away easily.
- Carefully remove the artichokes from the water and let them cool slightly.
- Preheat the grill to medium-high heat.
- Once cool enough to handle, cut the artichokes in half lengthwise and remove the fuzzy choke with a spoon.
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, black pepper, dried oregano, and red pepper flakes to create the marinade.
- Brush the artichoke halves generously with the lemon-garlic marinade, ensuring both sides are well coated.
- Place the artichokes cut side down on the grill and cook for 5-7 minutes, or until they are nicely charred and tender.
- Flip the artichokes and grill for an additional 5 minutes.
- Remove from the grill and serve hot, drizzling any remaining marinade over them.
