Grilled Asparagus and Tomato Salad with Balsamic Vinaigrette

Welcome summer with a vibrant and refreshing salad that bursts with flavors. This Grilled Asparagus and Tomato Salad is a symphony of tender, smoky asparagus and juicy cherry tomatoes, tossed together with fresh basil, and laced with a homemade Balsamic Vinaigrette. Topped with a generous dusting of Parmesan cheese, this salad is the perfect side dish to any barbecue or alfresco dinner party.

Ingredients

Parmesan cheese
1/3 cup, grated
Fresh basil
1/4 cup, finely chopped
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Balsamic vinegar
1/4 cup
Olive oil
1/2 cup, plus extra for drizzling
Cherry tomatoes
2 cups, halved
Asparagus
1 pound, tough ends trimmed

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the asparagus with 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1/4 teaspoon of salt, and 1/4 teaspoon of freshly ground black pepper.
  3. Grill the asparagus for 3-4 minutes per side, until tender and lightly charred. Remove from the grill and let it cool slightly.
  4. Cut the grilled asparagus into bite-sized pieces and place them back in the bowl.
  5. Add the halved cherry tomatoes, chopped basil, and grated Parmesan cheese to the bowl.
  6. To make the vinaigrette, in a small bowl, whisk together the remaining olive oil, balsamic vinegar, salt, and black pepper.
  7. Drizzle the vinaigrette over the salad, and toss gently to combine all the ingredients.
  8. Adjust the seasoning with additional salt and black pepper to taste.
  9. Serve the Grilled Asparagus and Tomato Salad immediately, with an extra drizzle of olive oil, if desired.
