
Grilled Asparagus and Tomato Salad with Balsamic Vinaigrette

Ingredients
- Parmesan cheese (1/3 cup, grated)
- Fresh basil (1/4 cup, finely chopped)
- Black pepper (1/2 teaspoon, freshly ground)
- Salt (1/2 teaspoon)
- Balsamic vinegar (1/4 cup)
- Olive oil (1/2 cup, plus extra for drizzling)
- Cherry tomatoes (2 cups, halved)
- Asparagus (1 pound, tough ends trimmed)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, toss the asparagus with 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1/4 teaspoon of salt, and 1/4 teaspoon of freshly ground black pepper.
- Grill the asparagus for 3-4 minutes per side, until tender and lightly charred. Remove from the grill and let it cool slightly.
- Cut the grilled asparagus into bite-sized pieces and place them back in the bowl.
- Add the halved cherry tomatoes, chopped basil, and grated Parmesan cheese to the bowl.
- To make the vinaigrette, in a small bowl, whisk together the remaining olive oil, balsamic vinegar, salt, and black pepper.
- Drizzle the vinaigrette over the salad, and toss gently to combine all the ingredients.
- Adjust the seasoning with additional salt and black pepper to taste.
