Gourmet Grilled Cheese and Bacon Sandwich

- 4 tablespoons, softened Butter
- 8 slices, or about 200 grams Cheddar cheese
- 4 slices, preferably sourdough or whole grain Bread
- 6 slices Bacon

Instructions
- Place a skillet over medium heat, add the bacon slices and cook until they're crispy and golden brown. This should take about 5-7 minutes. Once done, remove the bacon slices from the skillet and let them drain on paper towels.
- Spread a generous layer of softened butter on one side of each bread slice. This will help the bread achieve a golden, crispy exterior when grilled.
- On the unbuttered side of two bread slices, place two slices of cheddar cheese each. Then, layer three slices of cooked bacon over the cheese.
- Top the bacon layer with the remaining bread slices, making sure the buttered side is facing out. Press down gently to make the sandwich stay together.
- Reheat the skillet over medium heat. Once hot, add the sandwiches. Cook on each side for about 3-4 minutes, or until the bread is toasted to a golden brown and the cheese has melted. Remember to flip the sandwiches carefully to avoid spillage of the melting cheese.
- Take the sandwiches off the skillet and let them cool for a few minutes before serving. This will make them easier to handle and it will let the cheese set a bit.
- Cut the sandwiches in half diagonally and serve while still warm. Enjoy the perfect blend of crispy, creamy, and cheesy!
