Ingredients

Original recipe serves 2

Butter
4 tablespoons, softened
Green chiles
1/2 cup, roasted and chopped
Cheddar cheese
4 slices (about 8 ounces)
Bread slices
4 slices (your choice of bread, such as sourdough or whole wheat)

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. Place two slices of bread, buttered side down, onto the skillet.
  4. Layer each slice with 2 slices of cheddar cheese and half of the chopped roasted green chiles.
  5. Top with the remaining slices of bread, buttered side up.
  6. Cook for 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.
  7. Carefully flip the sandwiches using a spatula and cook for another 3-4 minutes, or until the second side is golden brown and the cheese is fully melted.
  8. Remove from the skillet and let cool for a minute before cutting the sandwiches in half to serve hot.
