Gourmet Grilled Cheese and Mushroom Sandwich

Ingredients

Unsalted butter
2 tablespoons, divided
Mushrooms
8 ounces, sliced (such as cremini or button mushrooms)
Salt
to taste
Black pepper
to taste
Cheddar cheese
4 slices
Sourdough or whole grain bread
4 slices

Instructions

  1. Heat 1 tablespoon of unsalted butter in a skillet over medium heat.
  2. Add the sliced mushrooms to the skillet and sauté until they are golden brown and tender, about 5-7 minutes. Season with salt and pepper to taste. Remove the mushrooms from the skillet and set aside.
  3. Spread the remaining tablespoon of butter on one side of each slice of bread.
  4. In the same skillet, place 2 slices of bread, buttered side down.
  5. Top each slice with 2 slices of cheddar cheese, followed by an even distribution of the sautéed mushrooms.
  6. Finish with the remaining 2 slices of cheddar cheese on top of the mushrooms.
  7. Cover with the remaining 2 slices of bread, buttered side up.
  8. Cook the sandwiches over medium heat until the bread is golden brown and the cheese has melted, about 2-3 minutes per side. If desired, press down gently with a spatula for even toasting.
  9. Once cooked, remove from the skillet and let cool for a minute before slicing in half. Serve hot and enjoy the melty goodness.
