Spicy Avocado Grilled Cheese Sandwich

- 4 tablespoons, at room temperature Unsalted butter
- 1, pitted and sliced Ripe avocado
- 2, deseeded and thinly sliced Fresh jalapenos
- 8 slices Cheddar cheese
- 4 slices Whole grain bread

Instructions
- Preheat a skillet or griddle over medium heat.
- Spread a tablespoon of butter on one side of each bread slice.
- Lay two slices of bread, buttered side down, on the skillet.
- On each slice of bread, layer with two slices of cheddar cheese, a handful of jalapeno slices, and a quarter of the avocado slices.
- Cover with the remaining bread slices, buttered side up.
- Cook for 3-4 minutes, or until the bottom bread slice is golden brown and the cheese has started to melt.
- Flip the sandwiches over carefully and cook for another 3-4 minutes, or until the other side is golden brown and the cheese is fully melted.
- Remove the sandwiches from the skillet and let them cool for a minute before cutting them in half.
- Serve warm and enjoy the heat of the jalapenos and creaminess of the avocado.
Tips
- If you cannot handle the heat of jalapenos, try using pickled jalapenos. They have less heat but still add a nice kick.
- To make a healthier version, use whole grain bread and low-fat cheddar cheese.
