Ingredients

Butter
4 tablespoons, softened
Mozzarella cheese
8 ounces, sliced
Pesto sauce
1/4 cup
Bread slices
4 slices (preferably sourdough or artisan bread)

Instructions

  1. Spread 2 tablespoons of pesto sauce evenly on one side of each of two slices of bread.
  2. Layer 4 ounces of mozzarella cheese on top of the pesto sauce on each of the two slices.
  3. Spread the remaining 2 tablespoons of pesto on one side of the other two slices of bread.
  4. Top the mozzarella with the pesto-spread slices, pesto side down, to form two sandwiches.
  5. Heat a skillet or griddle over medium heat.
  6. Spread softened butter on the outer side of each sandwich.
  7. Place the sandwiches, buttered side down, on the skillet or griddle.
  8. Cook for 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt.
  9. Carefully flip the sandwiches and cook for another 3-4 minutes, or until the other side is golden brown and the cheese is fully melted.
  10. Remove from heat and let cool for a minute before serving.
  11. Cut the sandwiches in half and serve warm.
