  • Chicken breast (2 boneless, skinless)

  • Barbecue sauce (1/2 cup (for marinating and spreading))
  • Mayonnaise (1/4 cup)
  • Red onion slices (1/2 cup)
  • Tomato slices (1 large)
  • Lettuce leaves (4 leaves (romaine or iceberg))
  • Hamburger buns (2)
  • Pineapple slices (2 (fresh or canned))

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, marinate the chicken breasts with salt, pepper, and half of the barbecue sauce (1/4 cup) for at least 30 minutes to enhance flavor.
  3. Grill the marinated chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  4. During the last few minutes of grilling, place the pineapple slices on the grill and cook for 2-3 minutes per side, or until they are lightly charred and caramelized.
  5. Remove the chicken and pineapple from the grill and let them rest for a few minutes to retain their juices.
  6. In a small bowl, mix the mayonnaise with the remaining barbecue sauce (1/4 cup) to create a flavorful spread.
  7. Spread the mayonnaise-barbecue mixture on the cut sides of the hamburger buns.
