Ingredients

Boneless, skinless chicken breasts

Bread
4 slices (your choice of type, such as sourdough or ciabatta)
Butter
2 tablespoons, softened
Romaine lettuce
2 cups, shredded
Caesar dressing
1/4 cup (store-bought or homemade)
Parmesan cheese
1/4 cup, grated
Croutons
1/2 cup

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts liberally with salt and pepper on both sides.
  3. Grill the chicken for 6-8 minutes per side, or until fully cooked and juices run clear.
  4. Remove the chicken from the grill and let it rest for at least 5 minutes to retain moisture.
  5. Slice the chicken into thin strips against the grain.
  6. Spread Caesar dressing generously on one side of each slice of bread.
  7. On two slices of bread, layer the shredded romaine lettuce evenly.
  8. Top the lettuce with the sliced grilled chicken.
  9. Sprinkle grated Parmesan cheese and croutons over the chicken.
  10. Cover with the remaining slices of bread, dressing side down.
  11. Spread softened butter evenly on the outer sides of both sandwiches.
  12. Heat a skillet over medium heat and place the sandwiches in the skillet.
  13. Cook for 2-3 minutes per side, or until the bread is golden brown and crispy.
  14. Remove from the skillet and let the sandwiches cool for a minute before slicing in half.
