Instructions
- Preheat your grill to medium-high heat.
- In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and black pepper until well combined.
- In a large bowl, combine the cubed chicken and half of the marinade. Allow it to marinate for at least 15 minutes, or up to 2 hours in the refrigerator for deeper flavor.
- While the chicken is marinating, prepare the vegetables by tossing them in the remaining marinade until evenly coated.
- Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with the bell peppers, red onion, zucchini, and cherry tomatoes to create a colorful display.
- Place the skewers on the preheated grill and cook for about 10-12 minutes. Turn them occasionally to ensure even cooking, until the chicken is no longer pink in the center and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes to allow the juices to redistribute.
- Serve the grilled chicken skewers with a side of fluffy rice, couscous, or a fresh garden salad for a complete meal.
Tips
- For an extra kick, add a pinch of red pepper flakes to the marinade.
- Feel free to swap in seasonal vegetables such as mushrooms, asparagus, or eggplant for variety.
- These skewers can also be cooked in the oven on a broiler setting if grilling is not an option.
