Ingredients
- Fresh parsley
- 2 tablespoons, chopped
- Fresh chives
- 2 tablespoons, chopped
- Black pepper
- 1/2 teaspoon, freshly cracked
- Salt
- 1/4 teaspoon
- Garlic
- 3 cloves, minced
- Unsalted butter
- 1/2 cup, softened
- Corn on the cob
- 4 ears, husked
- Lime
- 1, cut into wedges (for serving)
Instructions
- Preheat your grill to medium-high heat (about 400°F/200°C).
- Peel back the husks of the corn, keeping them attached at the base. Remove the silk strands and rinse each ear under cold water to remove any remaining debris.
- In a medium bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped chives, salt, and black pepper. Mix thoroughly to create a flavorful garlic herb butter.
- Generously spread the garlic herb butter all over each ear of corn, ensuring every inch is coated for maximum flavor infusion.
- Carefully pull the husks back up over the corn and secure them with kitchen twine or strips of husk. This helps to keep the butter and moisture in while the corn grills.
- Place the corn on the preheated grill and cook for 10-15 minutes, turning occasionally, until the corn is tender and displays beautiful grill marks. The husks may char slightly; this adds to the flavor!
- Once grilled, remove the corn from the grill and let it cool for a minute before unwrapping. Serve immediately with lime wedges and any remaining garlic herb butter on the side for dipping.
Tips
- For a spicier kick, consider adding a pinch of cayenne pepper or a splash of hot sauce to the garlic herb butter.
- Try using fresh thyme or basil in place of parsley and chives for a different flavor profile.
- If desired, grill the corn without the husks for a more intense smoky flavor, but be sure to soak the corn in water for 30 minutes beforehand to prevent burning.
