Grilled Halloumi and Summer Vegetable Skewers with Basil Dressing

Ingredients
- 8 Wooden skewers
- to taste Salt and pepper
- 2 tablespoons Lemon juice
- 1/4 cup Olive oil
- 1 cup, chopped Fresh basil leaves
- 1, cut into chunks Red onion
- 2, various colors, cut into chunks Bell peppers
- 1, cut into thick slices Zucchini
- 1 cup Cherry tomatoes
- 1 block (8 oz), cut into cubes Halloumi cheese

Instructions
- Soak the wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
- Preheat the grill to medium-high heat.
- In a bowl, combine the olive oil, lemon juice, chopped basil, salt, and pepper. This will serve as your basil dressing.
- Thread the halloumi cheese cubes, cherry tomatoes, zucchini slices, bell pepper chunks, and red onion chunks onto the skewers. Try to distribute the ingredients evenly across each skewer.
- Brush the skewers generously with the basil dressing. Keep some dressing aside for serving.
- Place the skewers on the preheated grill. Grill for 4-5 minutes per side, until the vegetables are tender and the halloumi cheese has a nice golden brown color.
- Remove the skewers from the grill and let them cool for a few minutes.
- Serve the grilled halloumi and vegetable skewers with the remaining basil dressing on the side for dipping.
Tips
- If you prefer, you can also use metal skewers. No need to soak them in water.
- Feel free to mix up the vegetables according to what’s in season or your personal preferences.
- If you can't find halloumi cheese, you can substitute it with another firm cheese like paneer or queso fresco.
