Instructions
- In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, salt, and black pepper to create a flavorful marinade.
- Add the lamb cubes to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavor absorption.
- Preheat your grill or grill pan to medium-high heat, ensuring it's hot enough for a nice sear.
- Thread the marinated lamb cubes onto skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for 3-4 minutes on each side, or until the lamb reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).
- While the lamb is grilling, prepare the yogurt sauce. In a small bowl, mix together the yogurt, diced cucumber, chopped mint, lemon zest, salt, and black pepper until well combined.
- Once the lamb skewers are done, remove them from the grill and let them rest for a few minutes before serving.
- Serve the grilled lamb skewers hot with the creamy yogurt sauce on the side for dipping.
Tips
- For an extra flavor kick, consider adding a pinch of cayenne pepper or crushed red pepper flakes to the marinade.
- Feel free to substitute the lamb with chicken or beef if preferred, adjusting cooking times accordingly.
- Pair the skewers with warm pita bread and a fresh salad for a complete meal.
