2 pounds, cut into 1-inch cubes
Cucumber
1 cup, finely diced
Yogurt
1 cup, plain greek yogurt
Fresh mint
1/4 cup, chopped
Lemon zest
1 teaspoon

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, salt, and black pepper to create a flavorful marinade.
  2. Add the lamb cubes to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavor absorption.
  3. Preheat your grill or grill pan to medium-high heat, ensuring it's hot enough for a nice sear.
  4. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece for even cooking.
