Grilled Lamb Skewers with Creamy Yogurt Sauce

Savor the delightful flavors of these juicy grilled lamb skewers, marinated in a fragrant blend of spices, and perfectly complemented by a refreshing and creamy yogurt sauce. Originating from the Middle East, this dish embodies the essence of outdoor grilling and communal dining, making it perfect for summer gatherings or a cozy family dinner. Each bite offers a mouthwatering combination of tender lamb and zesty yogurt, transporting your taste buds to the sun-soaked Mediterranean.

Ingredients

Olive oil
1/4 cup
Lemon juice
2 tablespoons
Garlic
3 cloves, minced
Cumin
1 teaspoon
Paprika
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Lamb leg
2 pounds, cut into 1-inch cubes
Cucumber
1 cup, finely diced
Yogurt
1 cup, plain greek yogurt
Fresh mint
1/4 cup, chopped
Lemon zest
1 teaspoon

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, salt, and black pepper to create a flavorful marinade.
  2. Add the lamb cubes to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavor absorption.
  3. Preheat your grill or grill pan to medium-high heat, ensuring it's hot enough for a nice sear.
  4. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for 3-4 minutes on each side, or until the lamb reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).
  6. While the lamb is grilling, prepare the yogurt sauce. In a small bowl, mix together the yogurt, diced cucumber, chopped mint, lemon zest, salt, and black pepper until well combined.
  7. Once the lamb skewers are done, remove them from the grill and let them rest for a few minutes before serving.
  8. Serve the grilled lamb skewers hot with the creamy yogurt sauce on the side for dipping.

Tips

  • 💡 For an extra flavor kick, consider adding a pinch of cayenne pepper or crushed red pepper flakes to the marinade.
  • 💡 Feel free to substitute the lamb with chicken or beef if preferred, adjusting cooking times accordingly.
  • 💡 Pair the skewers with warm pita bread and a fresh salad for a complete meal.
