Grilled Mahi Mahi with Mango Salsa

Ingredients

  • Mahi Mahi fillets (2)
  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)
  • Ripe Mango (1, peeled, pitted and diced)
  • Red bell pepper (1/2, diced)
  • Jalapeno (1, seeds removed and finely diced)
  • Red onion (1/4 cup, finely diced)
  • Cilantro (2 tablespoons, chopped)
  • Lime (1, juiced)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the Mahi-Mahi fillets evenly with the olive oil. Season both sides of the fillets with salt and pepper.
  3. Place the fillets on the preheated grill. Cook for about 4-5 minutes on each side, or until the fish becomes opaque and flakes easily with a fork. While the fish is grilling, you can begin to prepare the Mango Salsa.
  4. In a medium bowl, combine the diced mango, red bell pepper, jalapeno, red onion, chopped cilantro, and fresh lime juice. Stir well to blend the flavors. Taste and adjust the seasoning with additional salt and pepper if necessary.
  5. Once the Mahi Mahi is fully cooked, transfer the fillets to a serving plate. Top each fillet generously with the prepared Mango Salsa. Serve immediately while the fish is warm, and the salsa is cool and refreshing.
