Grilled or Roasted Zucchini

This recipe features delicious grilled or roasted zucchini seasoned with herbs and spices.

Ingredients

  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Dried oregano (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Zucchini (4 medium-sized, sliced)

Instructions

  1. Preheat the grill or oven to medium-high heat.
  2. In a bowl, combine the olive oil, garlic powder, dried oregano, salt, and black pepper.
  3. Brush the zucchini slices with the seasoned olive oil mixture.
  4. If grilling, place the zucchini slices directly on the grill grates and cook for 3-4 minutes per side, or until tender and slightly charred.
  5. If roasting, spread the zucchini slices in a single layer on a baking sheet and roast in the preheated oven for 12-15 minutes, or until tender and slightly browned.
  6. Remove from the grill or oven and serve hot as a side dish.
