Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Dried oregano
1 teaspoon
Garlic powder
1/2 teaspoon
Olive oil
2 tablespoons
Zucchini
2 medium-sized, cut into 1/4 inch thick slices

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. In a small bowl, combine the olive oil, garlic powder, dried oregano, salt, and freshly ground black pepper. Stir until all the ingredients are well incorporated.
  3. Using a basting brush, generously coat the zucchini slices with the seasoned olive oil mixture.
  4. For grilling, place the zucchini slices directly on the grill grates. Cook them for approximately 3-4 minutes per side, or until they are tender and slightly charred.
  5. For roasting, arrange the zucchini slices in a single layer on a baking sheet. Roast them in the preheated oven for about 12-15 minutes, or until they are tender and slightly browned.
