Servings: 4

Ingredients

  • Fresh oysters (12 large, cleaned)
  • Unsalted butter (1/2 cup (1 stick), melted)
  • Garlic (4 cloves, minced)
  • Fresh parsley (1/4 cup, finely chopped)
  • Lemon (1, sliced into wedges)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Carefully scrub the oyster shells under cold water to remove any dirt or debris.
  3. Place the cleaned oysters flat side up on the grill. Close the grill lid and cook for about 5 minutes, or until the shells begin to open.
  4. While the oysters are grilling, prepare the garlic butter mixture by combining the melted butter, minced garlic, chopped parsley, salt, and black pepper in a small bowl. Mix well to combine.
  5. Once the oysters have opened, carefully remove them from the grill using tongs. Use an oyster knife to gently pry open the shells further.
  6. Brush each oyster generously with the garlic butter mixture, and top with a slice of lemon.
  7. Return the oysters to the grill and close the lid. Cook for an additional 3-5 minutes, or until the oysters are cooked through and the butter is bubbling.
  8. Remove the oysters from the grill and serve immediately, garnished with additional lemon wedges and a sprinkle of fresh parsley.
