Servings: 4

Ingredients

Paneer
400 grams, cut into cubes
Yogurt
1 cup, thick
Ginger-garlic paste
2 tablespoons
Turmeric powder
1 teaspoon
Red chili powder
1 teaspoon (adjust to taste)
Garam masala
1 teaspoon
Lemon juice
2 tablespoons
Salt
1 teaspoon (adjust to taste)
Bell peppers (capsicum)
1 cup, cut into chunks
Onion
1 medium, cut into chunks
Cherry tomatoes
1 cup
Oil
2 tablespoons (for brushing)
Mint chutney
for serving

Instructions

  1. In a large mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, lemon juice, and salt. Whisk until smooth and well blended to create a rich marinade.
  2. Add the paneer cubes into the marinade and gently toss to coat them evenly. Cover the bowl and let it marinate for at least 30 minutes in the refrigerator, allowing the flavors to infuse into the paneer.
  3. While the paneer is marinating, prepare the vegetables by cutting the onion and bell peppers into chunks suitable for skewering.
  4. Preheat your grill or grill pan over medium heat, ensuring it's hot enough to achieve a good char on the paneer and vegetables.
  5. Thread the marinated paneer cubes, onion chunks, bell pepper pieces, and cherry tomatoes onto the skewers, alternating the ingredients for an attractive presentation.
  6. Brush the assembled skewers lightly with oil to prevent sticking and enhance the grilling process.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking and charring. The paneer should turn golden brown and the vegetables should be tender.
  8. Once grilled to perfection, remove the skewers from the grill and serve hot, accompanied by mint chutney or yogurt dip for a refreshing contrast in flavors.
