Ingredients
- Salt
- to taste
- Pepper
- to taste
- Olive oil
- 2 tablespoons
- Cherry tomatoes
- 1 cup
- Zucchini
- 1 medium, sliced into 1/2 inch rounds
- Red onion
- 1 small, cut into chunks
- Bell peppers
- 2, cut into 1-inch pieces
- Pastrami
- 1 pound, cut into 1-inch pieces
Instructions
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent them from burning.
- In a large bowl, mix together the pastrami, bell peppers, red onion, zucchini, and cherry tomatoes. Drizzle with olive oil, and season with salt and pepper. Toss until everything is well coated.
- Thread the ingredients onto the skewers, ensuring a good mix of pastrami and vegetables on each skewer.
- Place the skewers on the preheated grill. Grill for 5-7 minutes on each side, or until the vegetables are tender and the pastrami is heated through and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Tips
- For a vegetarian option, replace the pastrami with firm tofu or halloumi cheese.
- You can substitute any of the vegetables with your favorites or what's in season.
