Ingredients

Salt

Pepper
to taste
Olive oil
2 tablespoons
Cherry tomatoes
1 cup
Zucchini
1 medium, sliced into 1/2 inch rounds
Red onion
1 small, cut into chunks
Bell peppers
2, cut into 1-inch pieces
Pastrami
1 pound, cut into 1-inch pieces

Instructions

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent them from burning.
  2. In a large bowl, mix together the pastrami, bell peppers, red onion, zucchini, and cherry tomatoes. Drizzle with olive oil, and season with salt and pepper. Toss until everything is well coated.
  3. Thread the ingredients onto the skewers, ensuring a good mix of pastrami and vegetables on each skewer.
  4. Place the skewers on the preheated grill. Grill for 5-7 minutes on each side, or until the vegetables are tender and the pastrami is heated through and slightly charred.
  5. Remove the skewers from the grill and let them rest for a few minutes before serving.

Tips

  • 💡 For a vegetarian option, replace the pastrami with firm tofu or halloumi cheese.
  • 💡 You can substitute any of the vegetables with your favorites or what's in season.
