Instructions
- Heat your grill to medium-high heat.
- To prepare the marinade, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, finely chopped fresh thyme, salt, and freshly ground black pepper in a small bowl.
- Place the portobello mushrooms in a shallow dish, gill side up. Pour the marinade evenly over the mushrooms. Let them marinate for 10 minutes, making sure to flip them halfway through to ensure even flavor absorption.
- Grill the marinated mushrooms for 5-7 minutes per side, until they are tender and bear beautiful grill marks.
- Remove the mushrooms from the grill and let them rest for a few minutes. This allows the flavors to meld together.
- Slice the grilled portobello mushrooms into thick strips and serve. They make a wonderful appetizer on their own, or can be used to elevate burgers and salads.
Tips
- For a smoky flavor, try adding a dash of smoked paprika to the marinade.
- These mushrooms can also be roasted in the oven. Simply place them on a baking sheet and roast at 375°F (190°C) for about 20 minutes.
