Grilled Portobello Mushrooms

Experience the umami-rich delight of Grilled Portobello Mushrooms, marinated in a tantalizing concoction of balsamic vinegar, olive oil, and aromatic herbs. Grilled to perfection, these mushrooms are a versatile superstar that can be enjoyed as a robust appetizer, a savory burger topping, or a hearty salad ingredient. This recipe harkens back to traditional Italian grilling methods, emphasizing simple ingredients and bold flavors.

Serves 4

Ingredients

Salt
1/2 teaspoon, or to taste
Black pepper
1/2 teaspoon, freshly ground
Fresh thyme
1 tablespoon, finely chopped
Garlic
3 cloves, minced
Balsamic vinegar
1/4 cup
Extra virgin olive oil
1/4 cup
Portobello mushrooms
4 large, stems removed

Instructions

  1. Heat your grill to medium-high heat.
  2. To prepare the marinade, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, finely chopped fresh thyme, salt, and freshly ground black pepper in a small bowl.
  3. Place the portobello mushrooms in a shallow dish, gill side up. Pour the marinade evenly over the mushrooms. Let them marinate for 10 minutes, making sure to flip them halfway through to ensure even flavor absorption.
  4. Grill the marinated mushrooms for 5-7 minutes per side, until they are tender and bear beautiful grill marks.
  5. Remove the mushrooms from the grill and let them rest for a few minutes. This allows the flavors to meld together.
  6. Slice the grilled portobello mushrooms into thick strips and serve. They make a wonderful appetizer on their own, or can be used to elevate burgers and salads.

Tips

  • 💡 For a smoky flavor, try adding a dash of smoked paprika to the marinade.
  • 💡 These mushrooms can also be roasted in the oven. Simply place them on a baking sheet and roast at 375°F (190°C) for about 20 minutes.
