Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, salt, and freshly ground black pepper until well combined.
- Take the rinsed and patted dry scallops, and generously brush them with the olive oil mixture, ensuring they are well coated.
- Place the scallops on the heated grill. Cook for 2-3 minutes per side. The scallops should turn a light golden brown, and feel slightly firm to the touch. Avoid overcooking as scallops can easily become rubbery.
- Once done, remove the scallops from the grill. Sprinkle the freshly chopped parsley over the scallops for added color and flavor.
- Serve immediately while they are hot. Enjoy your gourmet grilled scallops with a side of lemon wedges, and perhaps a glass of chilled white wine.
Tips
- For a smoky flavor, consider adding a dash of paprika to the olive oil mixture.
- To ensure even cooking, try to use scallops of the same size.
- Brush the grill with a bit of oil before grilling to prevent the scallops from sticking.
