
Grilled Shrimp and Avocado Sandwich
This delicious grilled shrimp and avocado sandwich is packed with flavor and makes for a satisfying meal.
Ingredients
- Mayonnaise (2 tablespoons)
- Bread (4 slices)
- Lettuce (4 leaves)
- Tomato (1, sliced)
- Avocado (1, sliced)
- Salt and pepper (to taste)
- Garlic powder (1 teaspoon)
- Lime juice (1 tablespoon)
- Olive oil (2 tablespoons)
- Shrimp (1/2 pound, peeled and deveined)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the shrimp, olive oil, lime juice, garlic powder, salt, and pepper. Toss to coat the shrimp evenly.
- Grill the shrimp for 2-3 minutes per side, or until cooked through and slightly charred.
- Toast the bread slices on the grill for 1-2 minutes, or until lightly toasted.
- Spread mayonnaise on one side of each bread slice.
- Layer the avocado, tomato, lettuce, and grilled shrimp on two slices of bread.
- Top with the remaining bread slices, mayo side down.
- Cut the sandwiches in half and serve.
