Fresh shrimp
1 pound, peeled and deveined
Olive oil
3 tablespoons
Unsalted butter

Garlic
4 cloves, minced
Lemon
1, juiced and zested
Fresh parsley
1/4 cup, chopped
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Lemon wedges
for serving
Skewers
for grilling (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. Preheat the grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
  2. In a mixing bowl, whisk together the minced garlic, lemon juice, lemon zest, olive oil, melted butter, chopped parsley, salt, and black pepper until well blended.
  3. Add the fresh shrimp to the bowl, tossing gently to ensure they are evenly coated in the marinade. For maximum flavor, allow the shrimp to marinate for at least 15 minutes, or up to 30 minutes if time allows.
  4. Thread the marinated shrimp onto skewers, leaving a little space between each shrimp to ensure even cooking. This also helps achieve that lovely char.
  5. Place the skewers on the preheated grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Be careful not to overcook, as this will result in tough shrimp.
