Grilled Shrimp Scampi
Indulge in the zest and vibrancy of summer with this exquisite Grilled Shrimp Scampi. Succulent shrimp are bathed in a tantalizing medley of garlic and fresh lemon, then kissed by the flames of the grill for a smoky, charred finish. This dish marries the rich culinary traditions of the Mediterranean with the simplicity of backyard cooking, making it a perfect centerpiece for gatherings or an intimate dinner. Rooted in Italian cuisine, scampi has evolved over the years, but our version honors its buttery origins while adding a light, bright twist. Serve alongside crusty bread to soak up every last drop of the delicious juices!
Servings: 4
Ingredients
- Fresh shrimp
- 1 pound, peeled and deveined
- Olive oil
- 3 tablespoons
- Unsalted butter
- 2 tablespoons, melted
- Garlic
- 4 cloves, minced
- Lemon
- 1, juiced and zested
- Fresh parsley
- 1/4 cup, chopped
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Lemon wedges
- for serving
- Skewers
- for grilling (if using wooden skewers, soak in water for 30 minutes)
Instructions
- Preheat the grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
- In a mixing bowl, whisk together the minced garlic, lemon juice, lemon zest, olive oil, melted butter, chopped parsley, salt, and black pepper until well blended.
- Add the fresh shrimp to the bowl, tossing gently to ensure they are evenly coated in the marinade. For maximum flavor, allow the shrimp to marinate for at least 15 minutes, or up to 30 minutes if time allows.
- Thread the marinated shrimp onto skewers, leaving a little space between each shrimp to ensure even cooking. This also helps achieve that lovely char.
- Place the skewers on the preheated grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Be careful not to overcook, as this will result in tough shrimp.
- Remove the shrimp from the grill and serve immediately, garnished with additional chopped parsley and lemon wedges for a burst of freshness. Enjoy with crusty bread to soak up the delicious garlic-lemon sauce!
