Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, combine 2 tablespoons of olive oil, salt, pepper, garlic powder, and finely chopped rosemary. Mix well to create a flavorful rub.
- Rub the sirloin steaks with the garlic-rosemary oil. Ensure an even coating on both sides of the steak to fully infuse the flavors.
- Place the steaks on the preheated grill. Cook for 4-5 minutes on each side for medium-rare, or adjust the cooking time to reach your preferred level of doneness. Remember, the steak will continue cooking for a few minutes off the grill.
- While the steaks are grilling, prepare the potatoes. Wash thoroughly and prick them with a fork. Wrap each potato individually in foil. Place them on the grill and cook for 45-60 minutes, or until they are soft when gently squeezed.
- Toss the mixed vegetables in the remaining 2 tablespoons of olive oil, season with salt, pepper, and any leftover rosemary. Place them in a grill basket or directly on the grill. Cook for 10-15 minutes, stirring occasionally, until they are charred and tender.
- Remove the steaks, potatoes, and vegetables from the grill. Allow the steaks to rest for a few minutes before serving to redistribute the juices.
- Serve each grilled sirloin steak with a baked potato and a generous serving of the grilled vegetables. Enjoy this hearty, wholesome meal straight from the grill!
