Original recipe serves 4

Rosemary
2 tablespoons, fresh and finely chopped
Garlic powder
1 tablespoon
Salt and pepper
to taste
Olive oil
4 tablespoons
Mixed vegetables (bell peppers, zucchini, eggplant)
2 cups, cut into bite-sized pieces
Potatoes
4 large
Sirloin steak
4 (8oz) steaks

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine 2 tablespoons of olive oil, salt, pepper, garlic powder, and finely chopped rosemary. Mix well to create a flavorful rub.
  3. Rub the sirloin steaks with the garlic-rosemary oil. Ensure an even coating on both sides of the steak to fully infuse the flavors.
  4. Place the steaks on the preheated grill. Cook for 4-5 minutes on each side for medium-rare, or adjust the cooking time to reach your preferred level of doneness. Remember, the steak will continue cooking for a few minutes off the grill.
  5. While the steaks are grilling, prepare the potatoes. Wash thoroughly and prick them with a fork. Wrap each potato individually in foil. Place them on the grill and cook for 45-60 minutes, or until they are soft when gently squeezed.
  6. Toss the mixed vegetables in the remaining 2 tablespoons of olive oil, season with salt, pepper, and any leftover rosemary. Place them in a grill basket or directly on the grill. Cook for 10-15 minutes, stirring occasionally, until they are charred and tender.
  7. Remove the steaks, potatoes, and vegetables from the grill. Allow the steaks to rest for a few minutes before serving to redistribute the juices.
  8. Serve each grilled sirloin steak with a baked potato and a generous serving of the grilled vegetables. Enjoy this hearty, wholesome meal straight from the grill!
