Instructions
- Preheat the grill to high heat (about 450°F to 500°F).
- In a small bowl, combine the salt, black pepper, paprika, and garlic powder. Mix well.
- Brush both sides of the steaks with 2 tablespoons of olive oil, then generously season with the spice mixture, pressing it onto the meat.
- For the chimichurri sauce, combine the chopped cilantro, oregano, minced garlic, red wine vinegar, red pepper flakes, and 1/2 cup of olive oil in a bowl. Mix well and set aside.
- Place the seasoned steaks on the preheated grill. Cook for 4-5 minutes on each side for medium-rare, adjusting the time according to your desired doneness (use a meat thermometer for accuracy: 130°F for medium-rare, 140°F for medium).
- Once cooked, remove the steaks from the grill and let them rest for 5 minutes to allow the juices to redistribute.
