Ingredients

Zucchini
1, sliced
Yellow squash
1, sliced
Red bell pepper
1, sliced
Red onion
1, sliced
Asparagus
1 bunch, trimmed
Cherry tomatoes
1 cup, halved
Mixed greens
4 cups
Feta cheese
1/2 cup, crumbled
Olive oil
3 tablespoons, divided
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the zucchini, yellow squash, red bell pepper, red onion, and asparagus with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
