Servings: 4

Ingredients

  • Flatbread (2 pieces)
  • Zucchini (1 medium, sliced)
  • Yellow bell pepper (1, sliced)
  • Red onion (1 small, sliced)
  • Cherry tomatoes (1 cup, halved)
  • Feta cheese (1 cup, crumbled)
  • Fresh basil (1/2 cup, chopped)
  • Olive oil (3 tablespoons)
  • Garlic powder (1 teaspoon)
  • Dried oregano (1 teaspoon)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat the grill to medium heat.
  2. In a large bowl, combine the sliced zucchini, yellow bell pepper, red onion, and halved cherry tomatoes. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, salt, and pepper. Toss well to ensure the vegetables are evenly coated.
  3. Place the seasoned vegetables on the grill and cook for 5-7 minutes, turning occasionally, until they are tender and slightly charred.
  4. While the vegetables are grilling, place the flatbread directly on the grill. Cook for 1-2 minutes on each side until the flatbread is lightly toasted and has grill marks.
  5. Once the vegetables are done, remove them from the grill and set aside. Remove the flatbread and layer it with the grilled vegetables, crumbled feta cheese, and chopped fresh basil.
  6. Slice the flatbread into wedges and serve immediately, drizzled with a little extra olive oil if desired.
