These grilled veggie skewers are a delicious and healthy option for your next barbecue or cookout.

Ingredients

  • Skewers (6, soaked in water)
  • Salt and pepper (to taste)
  • Fresh herbs (such as rosemary, thyme, or basil) (1 tablespoon, chopped)
  • Garlic (2 cloves, minced)
  • Olive oil (2 tablespoons)
  • Mushrooms (8 ounces, halved)
  • Cherry tomatoes (1 cup)
  • Red onion (1, cut into chunks)
  • Bell peppers (2, cut into chunks)
  • Zucchini (2 medium, sliced)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, bell peppers, red onion, cherry tomatoes, and mushrooms.
  3. In a small bowl, whisk together the olive oil, minced garlic, chopped fresh herbs, salt, and pepper.
  4. Pour the marinade over the vegetables and toss to coat evenly.
  5. Thread the marinated vegetables onto the soaked skewers, alternating between different vegetables.
  6. Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from the grill and serve hot.
