Skewers
8-10 (if using wooden skewers, soak in water for 30 minutes)

Black pepper
1/2 teaspoon
Fresh herbs (such as parsley, oregano, or thyme)
1/4 cup, chopped
Garlic
3 cloves, minced
Olive oil
1/4 cup
Mushrooms
1 cup, halved
Cherry tomatoes
1 cup
Red onion
1 medium, cut into chunks
Bell peppers (any color)
2, cut into chunks
Zucchini
1 medium, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large mixing bowl, combine the sliced zucchini, bell peppers, red onion, cherry tomatoes, and halved mushrooms.
  3. In a smaller bowl, whisk together the olive oil, minced garlic, chopped fresh herbs, salt, and black pepper to create a fragrant marinade.
  4. Pour the marinade over the vegetables and toss gently to ensure each piece is thoroughly coated.
  5. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
