Ingredients
- Skewers (6, soaked in water)
- Salt and pepper (to taste)

- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Mushrooms (8 ounces, halved)
- Cherry tomatoes (1 cup)
- Red onion (1, cut into chunks)
- Bell peppers (2, cut into chunks)
- Zucchini (2 medium, sliced)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, bell peppers, red onion, cherry tomatoes, and mushrooms.
- In a small bowl, whisk together the olive oil, minced garlic, chopped fresh herbs, salt, and pepper.
- Pour the marinade over the vegetables and toss to coat evenly.
- Thread the marinated vegetables onto the soaked skewers, alternating between different vegetables.
