Ingredients

Venison steaks
4 (6-8 ounces each)
Olive oil
2 tablespoons
Salt

Mixed berries (blueberries, raspberries, blackberries)
2 cups
Sugar
1/4 cup
Balsamic vinegar
1/4 cup
Cornstarch
1 tablespoon
Water
2 tablespoons (for slurry)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the venison steaks generously with salt and pepper, then brush both sides with olive oil.
  3. Place the steaks on the grill and cook for 5-7 minutes on each side, or until they reach your desired level of doneness (medium-rare is recommended for the best flavor and tenderness).
  4. While the steaks are grilling, prepare the berry sauce. In a saucepan over medium heat, combine the mixed berries, sugar, and balsamic vinegar.
  5. Cook the berry mixture, stirring occasionally, until the berries begin to break down and the sauce starts to thicken, about 10 minutes.
  6. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then slowly stir this into the berry sauce.
  7. Continue to cook the sauce for another 2-3 minutes, or until it thickens to your liking. Remove from heat and let it cool slightly.
  8. Once the steaks are done, remove them from the grill and let them rest for a few minutes before slicing.
  9. Serve the grilled venison steaks topped with the warm berry sauce.
