- Venison steaks
- 4 (6-8 ounces each)
- Olive oil
- 2 tablespoons

- Mixed berries (blueberries, raspberries, blackberries)
- 2 cups
- Sugar
- 1/4 cup
- Balsamic vinegar
- 1/4 cup
- Cornstarch
- 1 tablespoon
- Water
- 2 tablespoons (for slurry)
Instructions
- Preheat the grill to medium-high heat.
- Season the venison steaks generously with salt and pepper, then brush both sides with olive oil.
- Place the steaks on the grill and cook for 5-7 minutes on each side, or until they reach your desired level of doneness (medium-rare is recommended for the best flavor and tenderness).
- While the steaks are grilling, prepare the berry sauce. In a saucepan over medium heat, combine the mixed berries, sugar, and balsamic vinegar.
- Cook the berry mixture, stirring occasionally, until the berries begin to break down and the sauce starts to thicken, about 10 minutes.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then slowly stir this into the berry sauce.
- Continue to cook the sauce for another 2-3 minutes, or until it thickens to your liking. Remove from heat and let it cool slightly.
- Once the steaks are done, remove them from the grill and let them rest for a few minutes before slicing.
- Serve the grilled venison steaks topped with the warm berry sauce.
