Grilled Zucchini

Grilled zucchini is a delicious and healthy side dish that is perfect for summer barbecues.

Ingredients

  • Fresh parsley (1 tablespoon, chopped)
  • Fresh lemon juice (1 tablespoon)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Garlic powder (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Zucchini (4 medium-sized, sliced lengthwise)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, garlic powder, salt, and black pepper.
  3. Brush both sides of the zucchini slices with the olive oil mixture.
  4. Place the zucchini slices on the grill and cook for 4-5 minutes per side, or until tender and grill marks appear.
  5. Remove the grilled zucchini from the grill and drizzle with fresh lemon juice.
  6. Sprinkle with chopped fresh parsley.
  7. Serve hot as a side dish.
