Grunkohl (German Kale)
Grunkohl, or German kale, is a beloved winter dish that warms the heart and soul. This hearty recipe combines tender kale, crispy bacon, and savory smoked sausage with creamy potatoes, all simmered together in a flavorful broth. Traditionally enjoyed in northern Germany during the colder months, this dish is often served with a splash of apple cider vinegar, which brightens the rich flavors. Perfect for family gatherings or cozy nights in, Grunkohl is not just a meal; it's a celebration of winter comfort food.
Ingredients
- Bacon
- 4 slices, diced
- Onion
- 1 medium, diced
- Kale
- 1 bunch, stems removed and chopped
- Potatoes
- 4 medium, peeled and diced
- Chicken broth
- 4 cups
- Smoked sausage
- 1 pound, sliced
- Apple cider vinegar
- 2 tablespoons
- Salt
- to taste
- Black pepper
- to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the pot and set aside, leaving the rendered fat in the pot.
- In the same pot, add the diced onion and cook until softened and translucent, about 5 minutes.
- Add the chopped kale to the pot and cook, stirring occasionally, until wilted, about 5 minutes.
- Stir in the diced potatoes, chicken broth, apple cider vinegar, and season with salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the potatoes are tender.
- Meanwhile, in a separate pan, cook the sliced smoked sausage over medium heat until browned and heated through, about 5-7 minutes.
- Once the kale and potatoes are cooked, adjust seasoning if needed. Serve the Grunkohl hot, topped with the crispy bacon and smoked sausage slices.
Tips
- For a vegetarian version, omit the bacon and sausage. You can use smoked paprika for added flavor.
- Feel free to add other root vegetables like carrots or turnips for additional texture and flavor.
- This dish can be made in advance and tastes even better the next day as the flavors meld together.
