Grunkohl (German Kale)

Ingredients
- 4 slices, diced Bacon
- 1 medium, diced Onion
- 1 bunch, stems removed and chopped Kale
- 4 medium, peeled and diced Potatoes
- 4 cups Chicken broth
- 1 pound, sliced Smoked sausage
- 2 tablespoons Apple cider vinegar

Instructions
- In a large pot, cook the diced bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the pot and set aside, leaving the rendered fat in the pot.
- In the same pot, add the diced onion and cook until softened and translucent, about 5 minutes.
- Add the chopped kale to the pot and cook, stirring occasionally, until wilted, about 5 minutes.
- Stir in the diced potatoes, chicken broth, apple cider vinegar, and season with salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the potatoes are tender.
- Meanwhile, in a separate pan, cook the sliced smoked sausage over medium heat until browned and heated through, about 5-7 minutes.
- Once the kale and potatoes are cooked, adjust seasoning if needed. Serve the Grunkohl hot, topped with the crispy bacon and smoked sausage slices.
Tips
- For a vegetarian version, omit the bacon and sausage. You can use smoked paprika for added flavor.
