Instructions

- In a large pot, bring the chicken or vegetable broth to a boil over medium heat.
- Add the sliced chicken or tofu to the boiling broth, followed by the fish sauce, soy sauce, sugar, and minced garlic. Reduce the heat to low, cover the pot, and let it simmer for 10 minutes.
- While the soup is simmering, prepare your toppings: wash and chop the green onions and cilantro, rinse the bean sprouts, and cut the lime into wedges.
- Once the soup is ready, divide the cooked rice noodles among serving bowls. Ladle the hot broth with chicken or tofu over the noodles.
- Top each bowl with bean sprouts, chopped green onions, and cilantro. Serve with lime wedges and chili flakes on the side for an added tang and spice.
- Enjoy your bowl of comforting Guay Tiew! Remember, the beauty of this dish is in customizing it to your taste with the toppings and condiments.
Tips
- For a vegetarian version, replace the chicken broth and chicken breast with vegetable broth and tofu. You can also use prawns instead of chicken for a seafood version. The key to a flavorful Guay Tiew is the broth, so take time to prepare it and don't rush the simmering process.
