Guriltai Shul
Guriltai Shul is a heartwarming traditional Mongolian noodle soup that embodies the spirit of Mongolian hospitality. Ingredients
- 2 tablespoons Vegetable oil
- 1 large, chopped Onion
- 3 cloves, minced Garlic
- 1 pound, cut into bite-sized pieces Beef (chuck or stew meat)
- 2 medium, sliced Carrots
- 2 medium, diced Potatoes
- 2 cups, chopped Cabbage
- 1 teaspoon (adjust to taste) Salt
- 1/2 teaspoon Black pepper
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/4 cup, chopped (for garnish) Fresh cilantro
- 6 cups Water
- 8 ounces Noodles (egg or wheat noodles)

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and minced garlic, cooking until the onions become translucent, about 5 minutes.
- Stir in the beef pieces and cook until browned on all sides, approximately 5 minutes.
- Add the sliced carrots, diced potatoes, chopped cabbage, salt, black pepper, cumin, and paprika. Stir well to combine all the ingredients.
- Pour the water into the pot and bring to a boil. Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the vegetables are tender and the beef is cooked through.
- While the soup is simmering, cook the noodles according to the package instructions. Drain and set aside.
- To serve, place a portion of cooked noodles in each bowl and ladle the hot soup over the noodles.
- Garnish with fresh chopped cilantro before serving for a refreshing touch.
Tips
- For added richness, you can substitute half of the water with beef broth.
- Feel free to customize the vegetables based on what's in season or your personal preferences. Peas and bell peppers work well too!
- If you like your soup spicier, add a pinch of red pepper flakes or a dash of hot sauce.
